Hiyayakko, is a Japanese dish for cold tofu. During a Japan summer, it’s apparently a delight to indulge in some creamy delicious soft tofu. I wanted to give it a go last weekend so I bought a small container of fresh soft tofu. The recipe is extremely easy. You can top the tofu with something with texture– sliced green onions, katsuobushi (dried bonito flakes), maybe grated ginger root. Pour some Ponzu over the tofu and toppings and you have a nice cooling dish.
