Larb is actually a salad. Although this very Southeast Asian process-taking lettuce and using the leaves to hold very flavorful meat reminds me of eating a taco. I believe I discovered Larb, again though my close Laotian friend Sandy. I’ve definitely had the Lao version of Larb several times at her family get togethers throughout the years. As someone who loves fish sauce, and the herbs and flavors of her family’s food, it was a dish I loved and something I wanted to try to make myself. Despite one or two labor intensive steps, I think Larb is something I should be making more as it’s very light, very flavorful and very very good.
